Since a long time I managed to visit the local market of Rotterdam before entering to work. I was so happy to see all those fruits and veggies. Directly I started to orientate which colours I would focus on, until I stumbled on rhubarb. They are back! So I came up with this breakfast of oatmeal, coconut, shaved beets, honey, puffed quinoa and stewed rhubarb. Sweet, sour and delicious!
